Yahoo! It is really harvest time. More zucchini, yellow squash, round french squash and greens beans than I know what to do with. Help.We've made soup from this recipe and it was really wonderful. Twice. I've made zucchini bread and muffins (recipe here) and fried zucchini. I've frozen some beans and even tried pickling them, too.
If any of you know something brilliant about using large quantities of squash, please let me know, and soon!
